Yummy almond coconut banana muffins

Sugar-Free Almond Chocolate Chip Cookies

  • 100g softened butter
  • 1/2 cup powdered erythritol
  • 1 1/2 cups almond flour
  • 3 tablespoons ground flaxsead
  • 3 tablespoons water
  • 1 teaspoon baking soda
  • 1/4 teaspoon xanthan gum
  • Pinch of salt
  • 1/2 cup of broken unsweetened chocolate buttons
  • Optional: 1/2 cup chopped pecans, walnuts or almond flakes

Cream the butter and powdered erythritol until completely dissolved. Add the almond flour, flaxseed meal, water and baking soda. Once combined, add the xanthan gum and salt. Gently combine the chocolate buttons and optional nuts if desired. Make dessert spoon portions into balls and line on baking paper on a baking tray, flatten slightly.  Cookies will flatten further on cooking so leave room between.  Bake at 200 C for 16 to 18 minutes, or until they turn golden brown.

Chocolate Almond Coconut Truffles

Scrummy Coconut Chocolate Icecream

Sugar-free chocolate mousse (with erythritol)

  • 150ml water
  • 10ml gelatine
  • 150ml milk
  • 50g cocoa powder
  • 1 pinch of salt
  • 80g butter
  • 10ml honey
  • 85g egg yolk
  • 120g powdered erythritol
  • ½ tsp cream of tartar
  • 250ml fresh whipped cream
  • Fresh berries

Add hot water to large bowl. Add gelatine and whisk until dissolved. Add milk, cocoa powder, salt, and vanilla. Mix and dissolve well. Add butter and honey. Leave to cool. Seperate egg yolks and whites. Whisk in the egg yolks. Set aside. Whisk egg whites and cream of tartar on high speed until stiff peaks. Add erythritol one table spoon at a time until well mixed. Add cocoa mixture slowly to the egg white, until well mixed. Pour finished mousse into your serving dishes. Refrigerate until set. Serve with whipped cream and fresh strawberries.

No-Sugar-Added Chocolate Pudding (for 4)

  • 2/3 cup PINK SUN granulated erythritol
  • ¼ cup PINK SUN high fat cocoa powder
  • 3 tablespoons cornstarch or 1/4 tsp xanthan gum
  • ½ teaspoon instant coffee
  • ¼ teaspoon fine pink himalayan salt
  • 2¼ cups organic whole milk
  • 1 tablespoon butter
  • 1 teaspoon vanilla

Stir together gently erythritol, cocoa powder, cornstarch/xanthan, coffee and salt in a large saucepan; gradually stir in milk.
Cook over medium heat, stirring constantly until mixture thinkens stir 1 minute more. Remove from heat, add butter and vanilla and mix.
Pour into individual dessert dishes.

Scrummy Coconut Chocolate Icecream

Fast Chocolate Cake in a Cup for One

  • 1 tablespoon coconut oil
  • 1 - 2 heaped tablespoons organic honey
  • 1/2 teaspoon vanilla extract
  • 1 egg free range, whisked
  • 2 tablespoons organic almond flour
  • 1 tablespoon organic coconut flour
  • ½ to 1 tablespoon organic cocoa powder
  • pinch of salt and baking soda
  • Cream (poured or whipped)

Mix all cake ingredients in a large cup and mix well.  Microwave for 2 minutes.  Top cake with whipped cream to serve - Yum!!!


Chocolate chip cake

  • 1/2 cup butter, melted
  • 1/2 cup coconut milk
  • 12 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup sifted organic coconut flour
  • 1 teaspoon baking powder
  • 1 cup of sweet chocolate chips
Blend together butter, coconut milk, eggs, sugar, salt and vanilla.  Combine coconut flour with baking powder and whisk into batter until there are no lumps.  Fold in chocolate chips.Bake at 175 degrees C for 35-40 mins – enjoy!!   
 

Coffee Cake

Mix

  • 1/2 cup butter
  • 9 eggs
  • 1/2 cup sugar
  • 1/4 cup coconut milk
  • 3/4 teaspoon salt
  • 3/4 teaspoon vanilla
  • 3/4 cup sifted organic coconut flour
  • 3/4 teaspoon baking powder
Topping
  • 2 cups walnuts chopped
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup butter
Mix butter, eggs, sugar, coconut milk, salt and vanilla. Combine coconut flour with baking powder and whisk into batter to remove lumps. Combine topping ingredients together and sprinkle over mix. Bake at 175 degrees C for 35-40 mins - indulge! 
 

Coconut butter cookies

  • 1/2 cup butter
  • 1 cup sugar
  • 4 eggs
  • 1/2 teaspoon vanilla
  • 1/2 cup sifted coconut flour
  • 2 cups grated or flaked coconut
Mix butter, sugar, eggs, vanilla. Stir in coconut flour and coconut. Drop spoon sized mounds onto greased tray. Bake at 190 degrees C for 18-20 mins.

Late Harvest Beet Root Soup

  • 3 large organic beetroot, well chopped
  • 400g tin of organic tomatoes
  • 2 gloves of garlic
  • 1 large onion chopped
  • 1 cup of beef stock
  • 1/2 cup fresh organic cream
  • Salt and Pepper to taste

Add all ingredients other than cream to a large pot with 1 cups of water. Simmer for 30 minutes. Remove from heat and blend well. Add cream then pepper and salt to taste. Return to heat for 5 minutes. Add yogurt and chives to garnish. Serves 6.
