Yummy Almond, Coconut, Banana Muffins - Sugar and Gluten free
These yummy low carb, sugar free, gluten free muffins are easy to make and great to eat with a dollop of cream!
Combine dry ingredients
- 2 cups almond flour
- 1 cup coconut flour
- 1/2 cup xylitol
- Teaspoon baking powder (gluten free)
- Teaspoon vanilla powder
- 4 free range eggs
- 1/4 cup walnut
- 1/4 cup chia seeds (or sunflower seeds)
Combined wet ingredients
- 2 bananas
- 1/2 cup melt coconut
- 2 tablespoons milk
Mix all ingredients together add extra mix is still to dry. Spoon into miffin tins (usually makes 12 muffins)
Cook at 180 C, for 15 minutes. Cool and serve with whipped cream.
