Delicious Healthy Organic Coconut Flour Carrot Cake
Baking could take on a different meaning when using organic coconut flour and an innovative recipe. With today’s growing interest in diets which are free from grains and gluten, many people are turning to organic coconut flour when it comes to baking.
However organic coconut flour baking needs some unique techniques to get good results. But when you are successful, it has many benefits than baking with wheat. Organic coconut flour is relatively light which makes it ideal for cakes, breads and muffins. It is also free from gluten and very high in fiber. It is low in carbohydrates, making it perfect as a good ingredient for diabetics and those people concerned about their glycaemic index.
A delicious carrot cake recipe using organic coconut flour. Makes about 12 large slices.
Ingredients
- 1 1/4 cups of organic coconut flour
- 2 1/2 cups of grated carrot firmly packed
- 1/2 cup of raisins or sultanas
- 1/2 cup of finely chopped walnuts
- 7-8 free range eggs
- 1 teaspoon cinnamon powder
- 1 teaspoons of baking soda
- 100g of organic butter
- 1/2 cup of PINK SUN raw organic coconut oil
- 1/2 cup of rice malt syrup or pure maple syrup or honey
- pinch of salt
To make
Pre-heat the oven to 180 Celsius. Blend the coconut flour with cinnamon powder and baking soda in a large bowl. Add salt and the walnuts. Whisk the half-dozen eggs in another large bowl and then slowly stir the melted butter, along with carrot, sultanas and the rice malt syrup. Take a 25 centimetre cake tin and grease it. Pour in mixture. Bake for about 40 minutes (standard oven). Check with dry wood skewer before removing. Cool before icing.
Icing Ingredients
- 225g of organic cream cheese
- 50g of organic butter or raw organic coconut oil
- About 1/3 cup of rice malt syrup or pure maple syrup or honey
- 1 teaspoon of mixed spices
- Juice of one lemon with zest
To make icing
Mix all ingredients in a bowl and glaze to cake top.
For a fancy flourish to the cake, you can add a little garnish of flakes of coconut and/or chopped walnuts.
This cake is good enough to be eaten even at the breakfast table to begin the day with a healthy snack. It is gluten free and free of refined sugar. It is also paleo friendly. This cake is rich in fiber, proteins and fat and will keep you feeling full.
