Oat Goji Coconut Cookies
Warm up your winter morning with these delicious oat, goji and coconut cookies
Ingredients
Dry ingredients
- 1 cup whole wheat flour
- 1 1/2 cups organic rolled oats (porridge oats)
- 1/2 tsp food grade baking soda
- 1/2 tsp baking powder
- 1/3 tsp salt
- 1 tbsp cinnamon
- 2 tbsp organic chia or pumkin seeds (optional)
- 1/3 cup large organic goji berries
- 1/2 cup unsweetened desiccated coconut or coconut flakes
Wet ingredients
- 1/2 cup honey (add some brown sugar too for sweeter version)
- 1/2 cup raw organic coconut oil melted
- 1 egg and 1 tbsp of water beaten
- dash of vanilla
To make
Mix all dry ingredients together in a large bowl except gojis. Mix all wet ingredients together in a bowl. Combine wet and dry ingredients together, sprinkle and mix in goji berries until evenly distributed throughout the cookie dough. Cool mix in the fridge for at least 15 minutes to help with shaping cookies. Place heaped teaspoonful sized balls of cookie dough on a lined baking tray and press each ball lightly in the center. Bake for 15-20 minutes or until the base of each cookie is golden brown. Take care to monitor the cookies to prevent sugar burning.
